Ingredients:
- 4 squares foccaccia or ciabatta bread split horizontally
- 4 slices red onion 1/4 inch thick
- 4 Romaine lettuce leaves, cleaned
- 8 slices roma tomato
- 1/4 cup Terrapin Ridge Balsamic and Herb Mustard
- 1/4 cup mayonnaise
- 4 tsp. extra virgin olive oil
- 4 slices mozzerella cheese
- 1/4 cup parmesan cheese
- 4 slices mortadella
- 4 slices Genoa salami
- 8 slices prosciutto
- 1/2 cup black olives or tapenade
Directions:
Layout each bottom half of bread. Spread a tablespoon of Terrapin Ridge Balsamic and Herb Mustard on each slice. Layer on each a slice of mozzarella, mortadella, salami, and two slices of prosciutto. Drizzle each with a teaspoon of extra virgin olive oil. Sprinkle each top half with a tablespoon of parmesan cheese and two tablespoons of black olives. Spread each top half with a tablespoon of mayonnaise. Layer on a romaine lettuce leaf, two slices of tomatoes, and a slice of red onion. Cover each bottom half with a top half and gently press together.
