Pipin’ Pepper Egg Sandwich


  • 4 large eggs, lightly beaten
  • 4 oz. cream cheese
  • 1/2 cup chopped ham
  • 1/4 cup onion, diced fine
  • 2 tbsp. butter
  • salt and pepper to taste
  • 4 slices cheddar cheese, optional
  • 1/2 cup Terrapin Ridge Pipin’ Hot Pepper Mustard
  • 4 bagels or kaiser rolls, sliced

Preheat oven to 350 degrees. Spread Pipin’ Hot Pepper Mustard on each half of kaiser roll. Lay cheddar cheese on bottom half of bagel or roll and then cover with top half. Wrap bagels or rolls in foil and heat in oven. Melt butter in a skillet over medium heat. Add onion and ham, cook until onion is almost translucent. Add cream cheese, quicly mixing together. Pour eggs over mixture into hot pan and scramble until almost set. Pull bagel or kaiser roll foil pack from the oven and pull each apart. Place a quarter of the egg mixture on each bottom half of bagel or kaiser roll, then cover with top half. Serve immediately. Makes 4 sandwiches.
