Smokey Open Faced Cheddar Tomato


  • 2 each English muffins, halved
  • 4 each crumpets, packaged
  • 2 tbsp. butter
  • 1/4 cup Terrapin Ridge Smokey Onion Mustard
  • 4 slices ripe tomatoes
  • 4 slices sharp cheddar cheese
  • 8 slices cooked bacon (optional)

Preheat oven to broil. Butter each English muffin or crumpet half. Spread each with one tablespoon of Terrapin Ridge Smokey Onion Mustard. Place on each a slice of tomato. Top each with a slice of cheddar cheese. Place sandwiches on baking sheet and broil five inches from heat for four minutes or until cheese melts and is bubbly. Makes 4 sandwiches.
