We have often joked, “Practice Safe Snacks, Use a Condiment”. Well, we’re only half-joking… and we’re not the only ones who know mustard helps make snacks safer.
Denver Post reporters Michael Booth and Jennifer Brown have written a thought provoking book: Eating Dangerously: Why the Government Can’t Keep Your Food Safe and How You Can. This is from their suggestions on protecting yourself against pathogens associated with deli meats (page 95):
“And if you are a mustard fan, slather it on. A study from Washington State University showed a slight reduction in pathogen growth when meat came into contact with mustard.”
