Don’t ask how we got it but here’s the recipe for the fabulous balsamic mustard dressing served on salads at the cafes at Nordberg’s department stores (or something that sounds kind of like “Nordberg’s”):
1/3 cup + 1 Tbsp. Balsamic Vinegar
1 cup Olive Oil
2 Tbsp. Chopped Red Onion
2 Tbsp. Brown Sugar
2 Tbsp. Dijon Mustard
Salt & Pepper to taste
Emulsify all ingredients in a small blender or with a stick blender until the onions are virtually invisible. We recommend Musette Dijon (MSE100) or Bornier Dijon (BRN110).
