- 1 jar Slimm & Nunne Habañero Horseradish
- 2 Large eggs
- 1/2 cup Water
- 1/2 cup All-purpose flour
- 2 tbsp Butter
- 1 tbsp Chopped chives or other herb (optional)
Put eggs, water, flour, and mustard in blender and whir until smooth. Transfer to bowl and mix in chives. Place nonstick skillet over medium heat. Melt butter until hot but not smoking. Ladle a scant 1/4 cup of mustard batter into skillet. Tilt & rotate the skillet to spread batter. Cook about 30 seconds until set. Flip and finish second side, about 20 seconds. Remove to plate, continue cooking remaining batter. (Makes 6 crepes)
Serving suggestions: (1) Roll up w/ shredded cheese; (2) Roll around sausage, a twist on “pigs in a blanket”; (3) Fill with shredded chicken or pork and top with salsa or your favorite sauce; (4) Eat as is — plain or with sour cream or crème fraiche.
