Smokey Onion Egg Salad


  • 4 each hard boiled eggs, finely chopped
  • 1/4 cup mayonnaise
  • 2 tbsp. Haus Barhyte Smoky Garlic Onion Mustard
  • Salt and pepper to taste
  • 8 slices multi-grain bread
  • 1 Head Boston lettuce, washed and dried
  • 2 tbsp. butter, optional

Combine the first five ingredients to make the salad and refrigerate until cold. Toast bread, then butter (optional). Spread salad on one slice of buttered toast. Place lettuce leaf over salad. Top with second piece of buttered toast. Serve immediately. Salad also makes an excellent appetizer served with crackers, bread rounds, or raw vegetables. Makes 4 sandwiches.
