Ingredients:
- 1 6 oz. can of water packed Albacore tuna
- 1/4 cup scallions, diced
- 1/4 cup Robert Rothschild Ginger Wasabi Sauce
- 2 tbsp. lite mayonaisse or non-fat yogurt
- Salt and pepper to taste
- 16 slices of cucumber
- 8 slices of your favorite sandwich bread
Directions:
Combine the first 5 ingredients and refrigerate. Top four slices of bread with 4 cucumber slices each and spread on tuna salad. Top with additional bread slices. Makes 4 sandwiches.
For a fun appetizer or snack, place a slice of cucumber topped with Wasabi Lime Tuna Salad on a sesame or rice cracker.
