Ingredients: 1 6-oz can of water-packed albacore tuna; 1/4 cup scallions, diced; 1/4 cup Tait Farm Ginger Mustard; 2 tbsp light mayonnaise or non-fat yogurt; Salt and pepper; 16 slices of cucumber; 8 slices of your favorite sandwich bread

1/4 cup scallions, diced
1/4 cup Tait Farm Ginger Mustard
2 tbsp light mayonnaise or non-fat yogurt
Salt and pepper
16 slices of cucumber
8 slices of your favorite sandwich bread

Directions

Combine tuna, scallions, mustard, mayo/yogurt, salt, and pepper and refrigerate.
Top four slices of bread with 4 cucumber slices each and spread on tuna salad. Top with additional bread slices.

Recipe Note

Makes 4 sandwiches. For a fun appetizer or snack, place a slice of cucumber topped with Ginger Mustard Tuna Salad on a sesame or rice cracker.
